Temperature stability protects wine quality. For wines sealed with a cork, fluctuations cause the cork to expand and contract, pushing air past and accelerating oxidation. Wines sealed under screwcap can also be impacted by temperature fluctuations, high temperatures will cause the wine to age rapidly and develop faults. A wine stored at a consistent 15°C will age better than one that swings between 10°C and 20°C daily.

Light damages wine. Ultraviolet rays break down compounds in wine, creating off-flavors. This is why quality wines come in dark glass bottles, though even dark glass can't fully protect against prolonged light exposure.

Temperature: Consistency Over Perfection
According to the Wine & Spirit Education Trust (WSET), the ideal storage temperature for wine is between 12-15°C, with 13°C considered optimal. However, consistency matters more than hitting exact numbers. 
An acceptable range is 7-18°C, as long as the temperature remains stable. Gradual seasonal changes are fine. Daily fluctuations of 5-10 degrees are damaging.
Important: Both red and white wines should be stored at the same temperature. The difference between reds and whites is serving temperature, not storage temperature. 
If your home stays around 16-18°C year-round, that's acceptable for short to medium-term storage (up to 2-3 years). For longer aging, aim for the 12-15°C range using a wine fridge or naturally cool storage space

Humidity: Protecting Corks
Ideal humidity for wine storage is 50-70% relative humidity, with 60% RH being optimal. Below 50%, corks dry out and shrink. Above 70-75%, mold can develop on corks and labels. 
Most homes maintain 40-60% humidity naturally. If you live in a very dry climate, a small humidifier in your storage area helps. In humid climates, ensure good air circulation.

Light, Position, and Stability
Store wine in complete darkness or very low light. Avoid direct sunlight, fluorescent lighting, or LED lights left on constantly. 
Store bottles horizontally so wine maintains contact with the cork, keeping it moist and preventing shrinkage. Screw-cap wines can be stored upright without issue. 
Avoid constant vibration. Don't store wine on top of refrigerators, washing machines, near speakers, or in high-traffic areas

When Wine Arrives

Hunter Valley Semillon is one of Australia's most age-worthy white wines. Our Big Bad Bill Semillon, produced from vines planted in 1980, shows crisp citrus and tropical fruit in its youth but develops honeyed toast, lanolin, and preserved lemon characteristics over 5-20 years.
Death by Semillon takes a different approach. This skin-contact, wild-fermented, barrel-aged Semillon is textural and juicy in youth with flavors of yellow flowers, candied orange, and dehydrated pineapple. Enjoy it within 3-5 years while those vibrant characteristics are at their peak.
Premium Hunter Valley Chardonnay often benefits from 2-5 years of aging. Our Reserve Chardonnay is whole bunch pressed, wild fermented in French oak, and hand-numbered by batch. It develops additional complexity over 3-6 years in proper storage. 
Storage tip: Despite being served chilled (8-12°C), white wines should be stored at the same temperature as reds (12-15°C). 

Sparkling Wines
